Our Story

Nature Attunement grew from a simple curiosity about growing food and slowly became something much larger. What began as a small project eventually turned into years of experimentation learning how to grow microgreens with consistency, quality, and care. Through that process a 

larger vision emerged: to create a farm that produces foods that are both deeply nourishing and 

genuinely delightful to encounter vibrant greens, unusual varieties, and ingredients that reconnect 

people with the diversity of the plant world.

Nature Attunement continues to grow toward that vision.

Esther Shanti holds a Master’s degree in Soil Science and has spent more than twenty years exploring 

sustainable agriculture. Her path has taken her from farms in the United States to India and Brazil, as well as professional work as a soil scientist in northern Utah.

 

Nature Attunement grew from this journey and a desire to cultivate foods that are both deeply nourishing and delightful to encounter.

Growing the Farm

As demand for the greens grew, the operation moved into a larger space when a friend invited Nature Attunement to share part of her commercial building — a former school that had been converted for small businesses.

This move allowed for more microgreen 

trials and improved environmental controls. It was a big step forward from the original setup and gave the farm room to experiment and refine growing techniques.

​

We were located on the second floor of the building, which came with its own quirks and lessons along the way. Like many small farms, the early years involved constant learning, adaptation, and creative problem solving.

​

After two years in that space, the building was sold and plans were made to convert it back into a school, which meant it was time once again to find a new home for the farm.

Today

Nature Attunement now operates from a larger production space in New Harmony, Utah, where the farm continues to grow and evolve.

Here we are able to grow a wider range of microgreens while maintaining the consistency and quality that local chefs and markets rely on.

In the early years much of the work happened solo, experimenting, troubleshooting, and slowly building systems that could produce reliable crops. Today Nature Attunement has grown into a small team working together to bring fresh greens to kitchens across Southern Utah.

Looking Ahead

Nature Attunement continues to grow and evolve. We are currently working on expanding our growing systems and exploring new crops that bring both beauty and nourishment to the table.

​

This includes ongoing work with mushroom cultivation, edible flowers, herbs, and additional greenhouse crops. We are also pursuing grants and other opportunities that will allow us to improve infrastructure, trial new varieties, and strengthen local food production in Southern Utah.

​

Our hope is to continue growing foods that are not only deeply nourishing, but also surprising, beautiful, and delightful to encounter.
